Master chef Petrișor Tănase teaches us how to prepare rhubarb jam. He also has a little secret
King Charles III enjoys, once again, with his visit to our country, where he owns several properties, the unparalleled hospitality of the Romanians. The meals are plentiful, with traditional dishes, such as Covasna sausage, Covasna cheese, matured cheese, homemade pita, pickles from Valea Zălanului, bee honey from Valea Zălanului, church wine and rhubarb jam.
But how is this rhubarb jam prepared, which has suddenly aroused the interest of Romanians? The famous master chef Petrișor Tănase, the host of the show “Health in food”, from Digi 24, offered us a quick recipe.
How to make rhubarb jam
“For a rhubarb jam or jam, a sugar syrup is first prepared, more precisely, we add one liter of water to one kilogram of sugar. Let everything boil, wait for the sugar to melt. Then, we add about a kilogram of rhubarb, just the stem, without the leaves. The stem is cut into thin slices, then we let it boil, stirring often, for about an hour or until it binds, until it stretches, like a thread. But let’s not forget to add a little salt, because the role of salt is to balance the taste, we can also add a little grated lemon peel, but not very much.
It is a very good jam. You can also make rhubarb cake, using the sponge cake composition. We pour the sponge cake composition into the pan, it must be about three centimeters thick, then we add the rhubarb on top, after previously passing it through the flour. Bake the cake at the right temperature, about 40-45 minutes. I want to tell you that it is an excellent cake!”, Petrișor Tănase revealed to Playtech News.
Rhubarb, a plant with healing powers? Warning, the leaves are toxic!
Rhubarb is a classic seasonal vegetable native to Asia that is eaten cooked. Be careful, however, only the stem is edible! Rhubarb leaves are toxic, they contain oxalates, strong, poisonous toxins that are very dangerous and life-threatening.
Rhubarb is said to have healing properties, being a rich source of vitamin K, which helps in blood clotting. It also contains calcium, iron, phosphorus, potassium, Vitamin C and Vitamin A, which help regulate blood pressure and cholesterol. Moreover, it protects the liver, prevents the occurrence of cancer and helps treat anemia.
The rhubarb stem has a sweet-sour taste. On the Internet, the price of a kilogram of rhubarb varies between 3 and 9 lei. And a jar of jam costs around 20 lei.
Adina Halas, follower of a healthy lifestyle: “Rhubarb has anti-inflammatory properties!”
Adina Halas, follower of a healthy lifestyle, claims, for Playtech News, that rhubarb can suddenly lose its miraculous powers when sugar is added.
“I don’t know much about rhubarb, because it’s not very fashionable in Bucharest, but I know that it has anti-inflammatory properties, probably because it has a lot of antioxidants. It depends on how it is cooked. If it’s in the jam version, with sugar, then goodbye, anti-inflammatory! But the rhubarb jam is a dish specific to the area visited by King Charles and I am convinced that it is delicious”, said Adina Halas for Playtech News.
