What ingredients do you need?
Tomato soup is recommended to be made with fresh tomatoes, but as they are not always available, canned tomatoes can also be used. Here’s what else you need:
- 2 tins of tomatoes (diced or pureed)
- 1 medium onion
- 2 cloves of garlic
- 2 tablespoons olive oil (the secret ingredient)
- 1 l of vegetable soup or water
- 1 tablespoon of sugar
- salt and pepper to taste
- finely chopped fresh basil
- finely chopped oregano

Method of preparation, step by step
As the name suggests, tomatoes are the main ingredient, so if they come from the garden it’s perfect. Otherwise, canned ones are used, but it is important to read the label carefully first, in order to buy the ones that are as clean as possible in terms of composition. You can use diced tomatoes, whole ones, even pureed ones, because they will go through the blender.
Well, to begin with, heat the olive oil in a pot, over medium heat, and add the chopped onion, which is left to temper until it becomes slightly golden and translucent. Next, add the chopped garlic and leave for another 1-2 minutes, until it releases its aroma. Then, add the tomatoes, mix well with the onion and garlic, and let it cook on medium heat for about five minutes.
The next step is to add the vegetable stock to the pot and let it simmer for about 15-20 minutes. If the soup is too acidic, add a spoonful of sugar. Attention, we must not forget the salt and pepper, which are put according to everyone’s taste.
After it has cooked sufficiently, take the pot off the heat and let it cool a little. Afterwards, with the help of a blender, puree it until it becomes creamy and smooth, then put it back in the pot and let it boil again. At the end add basil/ and or oregano.
